Hi Tansy,
If corn is used as the PROTEIN source then you will
likely have urinary problems. Corn and other "plant based"
protein will raise the ph of the urine. This results in crystal
formation, urethra blockage, bladder stones, bladder infections,
etc., etc.
That is why it is important for the protein source to be "meat
based"
such as chicken, fish, eggs, etc.
Now back to using corn over rice as the CARBOHYDRATE source.
Corn does not cause a post meal glucose peak like rice does.
That is why corn is probably better for insulinomas patients and
why corn/barley may possibly prevent the formation of an insulinoma.
