I don't take my kids food up until I get up around 6 and that makes about 4 hours fasting by the surgery. No need to stress the little guys out more than that. I have been through the entire gamut of vets and techs who said "no food night before". It is scary. My last two ferret surgeries, I took him duck soup at 2pm after procedure at 10 and he ate like a champ! Within 24 hours he was munching his kibble again.
