when a Vet
removes one adrenal why they don't remove the other one?

Well, that's because not every ferret will develop adrenal tumors in
both glands - in fact, only about 15% do, if I'm remembering my
percentages correctly. The other ferrets do very well with one
gland. If both glands do develop problems, then the ferret can do
very well on medication after removal, but why do that if you don't
need to?

It's a commonly asked question, and I do know of some of my
colleagues that will remove a normal gland, but I don't.
