Like you, I would not discount the idea of ECE because it has been a
week, because they simply may not have encountered shed virus before
then.
In extreme cases IV or sub-Q fluids may be needed. We had one
getting daily sub-Q for whom I wish IV had been used instead because
he sustained kidney damage. the sub-Q seems sufficient but wasn't.
