It's pretty easy. Just divide the percentage of nutrient by the
percentage of dry matter in the food. Since the moisture content is
usually given instead of the dry matter percentage, just subtract the
moisture from 100%.

For example, 8-in-1 beef ferret diet (wet) has 10% protein and 74%
moisture. That means 100% minus 74%, or 26%, of it is dry matter. 10
divided by 26 is 0.38, or a whopping 38% protein!

This isn't perfect, since among other factors, dry food also contains
some moisture. But since the dietary measurements are just averages
anyway, it's close enough.
