Sounds like it could be a blood sugar problem... is the lack of balance displayed mostly as a sort of "stumbling" in the back end? That's what my first ferret did when he developed insulinoma... it was like his hind end could quite keep up with his front, and if he hadn't eaten in a while, he seemed very tired.
Blood sugar might be something to have the vet check.
