Carafate should help with the latter two... Would it be possible for
you to give subQ fluids at home? If you can get some needles, a large
syringe, and a bag of lactated ringers solution from the vet, you
could give a 20-30ml injection morning and night, to prevent/treat
overnight dehydration as long as she's not drinking on her own.

If you're feeding really soft food during the day (I like to get it
down to a really soupy consistency), that will keep the hydration up
during the day, and then a subQ before bed will keep her from
'crashing' overnight as long as she's not drinking from a water bottle
on her own.

My Ziya went in for blockage surgery and crashed really hard due to
dehydration two days later... refusing food and grinding her teeth,
but after a few subQ fluid treatments (especially at night before I
went to bed) and a couple of days of Carafate, she was lapping up the
diluted 'soupy' food on her own three times a day, and once she
started drinking out of the water bottle on her own, it was all uphill
from there.
