Ferrets get resisitance to ECE so the chances are that she either had damage from the first bout and then problems related to the damage, or more likely since it sounds like you are mentioning discrete situations, she had something else causing runs. (Green means it is very rapid transit.)

Ulcers in the mouth can be caused by several things such as some infections, scraping, and kidney disease.

Bilateral loss on hair forward of the tail is a very good indicator of adrenal neoplasia.

There is a serious type of anemia which can be caused by adrenal disease. There are some excellent past posts by Dr. Jerry Murray and others which go into this. Look up Epogen, and I know there are some other things to search under but off-hand can't think what they are though an Epogen search should find them for you in

Ferrets usually do well after adrenal surgery and after splenic removal.

You say "greenish" for the feces. Was it very dark green? Like black very dark green can indicate upper GI bleeding and post-op ulcers are not particularly uncommon in ferrets.

Was the tissue sent for biopsy?

Liver test results can be thrown off by not eating or by not digesting food well.

Glad they got the insulinoma.
