BTW, age also affects the willingness to try new foods.

We kept track with one to see how open to new foods we could get him to be, figuring that this would be safest for him if a food goes off the market or if he becomes ill.

What we found was that he was willing to try pretty much any food we encourages until he hit the age of 12 weeks (3 months). Then in a matter of two days it became much harder and he became markedly resistent to trying new foods.

I've read of a 6 month window but don't know if that was based on documentation or estimation, but this particular individual changed greatly within 2 days (and NOT after a bad food experience) at 3 months of age. I would not be surprised if there is a later window where resistence becomes even greater and introduction harder.

Individuals do vary quite a bit even as kits for ease of food introductions, and preferences in flavors vary quite a bit among individuals.
