It varies from ferret to ferret and probably has a lot to do with the ferret's age, strength going into the surgery, extent of the surgery, etc.
It's been a number of years since I've had one go through major surgery, but I recall having to feed mine for a couple days or more after adrenal surgery. Some report their ferrets eating their regular food almost immediately, but that is definitely not always the case.
As for the bruising, some of mine have had major bruising, other's have had none.
