Subject: Body hair loss, itchy, both adrenals removed

Elmo (5 years) never quite grew his hair back on his tail after the removal of both adrenals last August. His hair had also thinned out drammatically all over his body (prior to the surgery) and did not appear to get a winter coat this year. The hair on his tummy took 5 months to grow back and even now is a bit thin.
Now he is showing symptoms of adrenal disease again. Hair loss all over body, although his tail has not drammatically changed. He is also very itchy. Blood workup and last sonogram show no growth or problem. His diet is excellent, his skin doesn't appear dry and no fleas or mites. I am giving him Omega-3 twice daily. (Just started.)
Has anyone else seen this all over body hair loss problem. What about the itchiness? To me, it shows all of the symptoms of adrenal, except it's not. Could the removal of both adrenals at the same time have thrown his little body for a loop? (It was necessary.) What tests should I have my Vet run next? He's had almost everything tested, probed and looked over with a sonogram. Does he need medication to supplement the lack of adrenals?
He's got lots of energy, no seizural activity, no insulinoma et al. (He's also battling ECE, but we seem to have that in check at the moment.)
