I have had an endoscopy done on one of my ferrets and it didn't seem too traumatic. My understanding of it is that it is a little camera on the end of a tube which they insert in their throat after being sedated. The camera will show them what is going on in the airways and take a pic. In my ferrets case I got a very expensive pic of his tonsils back and he had them removed the next day. I'm glad we did it because in the end he didn't have to be cut open to fix what was wrong (only put under) because we knew exactly. I'm not sure why they have to wait for the endoscopy till next week, but if it could diagnose the problem, then I would get it right away (especially as Ellie is getting worse). You need to know what is wrong before you can work on getting her better. I hope everything works out well.
