Birdseed poop is a sign that the ferret isn't obsorbing the food like they should. Sometimes it is just a sign of an upset stomach but if it goes on for a long time, you should take her to a vet. It can be a sign of infection or IBD.
As to the weight gain, sometimes ferrets just fluctuate in weight. I noticed my little girl gained some weight when I started using the air conditioner. The vet said that she was storing up for "winter" because it got colder. (My dog also started putting on weight for the same reason.). As long as it's not affecting the ferrets quality of life and the weight doesn't appear to be excess fat, I wouldn't be too concerned about the weight gain.
