There are studies in other species showing increased rated of trouble swallowing (dysphagia -- hope I spelled that right) when some neural crest genetic variations are present, so I think that your rate question is a good one.

Trouble swallowing came up on Ferret-Genetics months back (last year? early this year?) and some studies are cited there, and I suspect that Pubmed may be a useful source, too.

Megaesophagus "neural crest"
