It sounds like he may have had a blockage that passed or may have been missed on gross necropsy but not before it did too much damage. Other things which cause those symptoms can include intestinal malignancies or other things that inflame the intestines too badly for food to move well enough. The symptoms and test results are highly consistent with a blockage of unknown cause, even the coughing which is not usual but can occur because it can be from reflux or from mechanical irritation of the trachea. Were samples sent for pathology? Were the tissues set rapidly? After the gall bladder GI tract info is lost most rapidly so if the tissues are not seen and fixed with formalin in just hours vital information can be gone.

Blockages are tricky, can be hard to spot, and tend to require emergency appointments and if complete then emergency surgery. The gas build-up on x-ray was from things not being able to pass. An untreated blockage can cause toxin build-ups to fatal levels within as short as 48 hours, can perforate the GI tract, can injury the GI tract causing bleeding or infection, etc. If we suspect a blockage we jump fast personally.
