It is possible that there is hidden insulinoma so the affected tissue was not in the boiopsy, or perhaps another cause of reduced blood glucose is occurring, such as a large infection. A large infection might also go with some of the rest of your description.

I was looking for very inclusive lists of causes of reduced blood glucose. Unfortunately, the best such lists are for humans, so there are limits to how applicable they may be. Here is one example in case anything rings a bell:

Remember that some other things can dump ferret's blood sugar, for example, Pau d Arco.

The itching can happen for a range of causes; adrenal growths among them.

This is probably a long shot but has this ferret been checked for liver failure and for some of the causes of liver failure like ADV?
