Tonya, it is not possible to know a cause offhand without a timely necropsy that includes pathology, but from the description the most common cause would be untreated insulinoma, one of the more common ferret diseases, and one for which there are multiple treatment options, with the most commonly used medical one being very inexpensive, too. Didn't your vet test the blood sugar levels when you made appointments about her symptoms? If so, and the if the blood glucose was then regularly fine there would be a different cause.
