A fan by itself is not enough since ferrets do not sweat. You CAN wet down cloth and place those over a cage and then run a fan on those (with cage door closed so that the ferrets are safe, and room door and windows closed to cool only that one room with evaporative cooling. Make sure that the time you are away will not exceed the safe time.

A ziplock bag poses the risk of blockage through ingestion. It is safer to fill water, seltzer, or pop bottles part way full and then freeze them. Remember that there will be condensation.

Ferrets often like to play with ice cubes.

An air conditioner is better than any of the above techniques and I am sure that members will provide their own window AC safety tips, since I have none of those.

Ferrets can adjust slowly to higher temperatures than around 80'F, but an abrupt change can be overwhelming.

If a ferret has cardiomyopathy, especially if it is advanced it is important to keep temperatures very constant, because otherwise the stress can be too large.
