Some hospitals do have vets handy on the premises overnight so that others can call them if a problem arises, and pay to have someone awake at night with the animals, but not all. There are many reasons attached: in some areas it may be a code violation to have a "residence"in a hospital even if it is not really one, in some areas space is so expensive that there simply isn't anywhere to provide such a sleeping location. and vets have lives and families outside their work like anyone else so it would need to be part of the work-week and appropriately compensated, so present on the bill.
Besides the options already mentioned one service that after-hours emergency animal hospitals provide is to care for critical care patients during the night. When our Spot threw a clot to his brain due to kidney disease and we we working (very successfully) to get him through his coma and back on his feet we transported him back and forth between the day and night hospitals for several days. The emergency clinic was also able to run multiple needed tests on him each night. It is an option to discuss with your vets if any of you find yourselves in similar situations.
