Here is some info. I got from our ferret's vet yesteray.

Raw egg yolks and whites
Due to possible health risks, raw egg yolks and whites are better not given to your ferret.

Salmonella risk
Risk is present for all ferrets. Especially kits, sick and older ferrets are at a higher risk.

Biotine deficiency risk
If more than 10% of the ferret's food consists of raw eggs,
due to the avidine that is present in the egg white, this can lead to biotine deficiency resulting in bilateral alopecia (loss of hair).
