Is he on any medication? If your ferret is on pred, a ferret with an empty stomach and pred administrated prior to food, the ferret can get an ulcer, which causes teeth grinding. Teeth grinding is caused by any type of stomach/GI pain in a ferret.
Typically when they show this symptom, they will eat less (if at all). This, of course, is dangerous. The grinding sound is pretty obvious - it sounds just like someone grinding their teeth together. You can see them doing it, too. I would suggest a vet visit.
