A few points:

when insulinoma first starts it can be very up and down in some ferrets. I suspect that is part of what is going on

treats do not provide a balanced diet by a long shot so having them be a major part of diet could itself cause problems

insulinoma can produce nausea which can cause a ferret to avoid food

the typical meds for insulinoma are Prednisolone and sometimes Diazoxide

If you say where you are generally located other members can write to you if they have vets to suggest; in one post you mentioned waiting to hear back from a location in MA on something but I do not know if that was just a long distance consultancy or local to you
