I have seen my ferrets do something similiar when they get a
piece of food stuck in or behind their teeth. perhaps he has
some malfunction of his throat such that food is becoming
stuck. I would think that examination with an optical probe
may be needed to determine if this is so. Can he drink and
swallow ok? Try crushing some of his food and make a soup
with water to see if he can cope with that.
