Yes - this is specifically part of what she does. She studies what
nutrients are available in foods, and how they are affected by things
like cooking. She does no work with supplements - just foods. Her
Ph.D. research was with human pre and post natal nutrition. More
recently, she has done a lot of work on Native American foods, and
how to increase the bioavailability of the contents of the foods.
On the Native American reservations here in the US, there are many
problems with poor nutrition. Some of it is due to poverty, but some
is due to culture. By studying what some of the cultural foods are,
and working with Tribal leaders to introduce small changes in food
usage and preperation methods, the hope is to imporve the quality of
what the people are consuming.
