Food/kibble when opened begins deteroriorating immediately in the presence of air, loosing it's nutritional values. Recommendations I have heard for keeping kibble after it has been opened is 2 weeks. Unless you have frozen the food I would think that it it not nutritional and surely can not taste good to your ferrets.

I would toss it and either buy smaller bags that you use up in 2 weeks time or if you prefer to buy the large bags, get gallon sized zip-lock bags and freeze what you won't use in 2 weeks. The kibble that you keep you should be stored in an air tight container to protect it's freshness as well as possible.
