Fitch is the name given to ferret pelts. Fur farming used to (and still
does in parts of Europe) use polecat ferrets, what in the USA are
called sable. So I think the term fitch ferret refers to polecat ferrets
(sables). Similiar to stoat(Mustela erminae) fur being called ermine. It
supposedly enhances the fur value if the end wearer doesn't know
its lowly (to them) origins.

I stand to be corrected on any of the above as there are people
more knowlegable than me.
