You are probably safer ticking to farmed ones grown for
human poultry consumption who do not die naturally and
have no signs of disease because even though there are
still the problems from crowding, there is at least a
population with fewer of the wild bird diseases including
mycobacteria. (See the articles on diseases in wild pigeon
flocks.)
I don't know that white meat and red meat would differ in
protein so would like to see refs on that. On the other hand,
it would not surprise me at all if the proportions and
representations of amino acids differ, and I honestly do not
know if, how, or how much that would be beneficial or the
reverse, nor for which medical conditions.
As I recall, white meat is fast twitch muscle, the kind used
in plyometrics, olympic weight lifting, sprinting, and other
activities which need a massive amount of power in
situations that quickly become anaerobic. Red muscle is
the type involved in longer term exercise that uses a lot of
oxygen, for instance running a marathon or biking a century.
Most being have a mix of these muscle types and your ratio
depends on your genetics, but one place where it is easy to
see the difference is comparing the breast meat of a
migrating bird with the breast meat of a ground bird which
can put our a sudden but very short burst of energy to get
out of the way, for example a duck in comparison with a
chicken.

In pigeons themselves the protein % appears to be higher in
white meat than red which has a higher fat content, but we've got 4
of us here with influenza right now, so check me, check me, check
me (which is always a good idea, anyway). I will let you compare
the meat types from various animals with each other.
