A few possibilities. But one off stool may be nothing, or just a clue to the beginning of something. In other words, one stool is not enough to go on.

It sounds like you have done a great job with her, but since she was so ill and malnurished, I would have a vet check her over and get some blood work to see what other underlying illness she may have. Like anemia from adrenal, and/or malnutrition, her blood sugar and Kidney function. You may also want to ask about dental work, if her teeth are that bad, they may need to be extracted or at least cleaned and assessed better.
Also, you can then have the stool checked for Coccidia, and Giardia.

Has she been exposed to other ferrets?
It could still be ECE, so don't discount it yet- depends on how her stools are after this one and how she is acting.
Of course, the next stool could be normal and all well, see how the next stools look and make a vet appointment in the meantime. A ferret in her more fragile condition can go downhill fast, so just be prepared in case, and hopefully it will be a false alarm.

Two weeks ago I rescued a ferret from my animal shelter that showed symptoms of adrenal

her teeth due to severe malnutrition. In my care, she has been thriving and gained almost a
pound - doubling her weight. This morning, I woke up to find her passing bright yellow
(almost orange) mucus-like stools with absolutely no smell. What is this? I've seen ECE
before, but this just doesn't look like that. She was a bit lethargic, but she did drink when I
put the water bowl under her nose.
