To: ferrethealth@yahoogroups.com

Just a few off the top of my head and I will give you some links, too.

Not all ferrets have all symptoms, in fact, there may only be one
symptom and there can be hidden insulinoma till it gets too bad
sometimes, and hidden adrenal disease is more common though
it finally shows up usually.

Insulinoma:
lethargy
periods of staring off into space (small seizures)
full seizures (when blood sugar drops way too low)
loss of consciousness (ditto)
nausea (tooth grinding, and more obvious signs)
sometimes diarrhea that has sort of a butterscotch pudding look
(had to be my favorite pudding, right? Yipes.)

Adrenal:
fat redistribution. One common presentation is an increased pear
shape with a too thin upper trunk and too fat lower trunk
Fur loss (usually bilateral)
Behavior that is more suited to a whole ferret: mounting or being
mounted, excessive grooming, adopting your toes or something
else as "baby dolls"
swollen nipple sometimes
swollen vulva in females
inflamed prostate in males so look for difficulty urinating
anemia (which can worsen to life threatening)
skin thinning and sometimes break-outs or discoloration
itchiness

a wonderful past post on why it is important to treat adrenal disease is

There are wonderful past posts in the separate FHL Archives about
treating these problems. The FHL Archives are easily searched and
the results often give you an idea who is or may be a vet, too:

Sukie (not a vet)
