My vet has said that ferrets never need more than 4 hours of fasting prior to surgery, since any food in their system is pretty much used up within that amount of time. For minor surgery, such as the teeth we recently had extracted from Trinny, she only needed to fast for 2 hours prior to surgery, probably since the surgery was not as invasive and was restricted only to her mouth.
