From what I can tell, they don't want you to freeze the jars because they are glass. I don't see why you couldn't put in plastic containers, or ice cube trays to freeze. You could e-mail gerber directly to find out the reason why you can't freeze it.

Hi all,
I know this is a borderline question for this forum, but..... since I
have to open a new can of pumpkin and start freezing cubes again, I
wanted to know if it's ok if I went ahead and added the gerbers baby
food to the pumpkin and just froze it all together. I did check the
gerbers website, and it says the open jar is good for 3 days max and
not to freeze it. I don't want to try it and find out it causes
something bad to happen to the food.
