Well, adding muscle mass involves a combo of a balanced
diet with enough high quality protein and plenty of exercise.
You can get a lot -- possibly more than you want ;-) of past

As to not going to the bathroom in certain places:
Never put down ammonia in some place where you don't want a
ferret to go because it smells too similar to urine.
You can get carpet runner and put that down, or put down little pots,
or you could try putting food in that location, or scenting the ferrets'
bedding with a safe scent such as rose essential oil, or vanilla extract
and once the ferret is used to that then put some similarly scented
cloth in the locations.
