How often do you feed your ferret? Ferrets with insulinoma should have smaller meals relatively often (4 - 6 hours, depending on the severity of the insulinoma). It's possible that he's hungry. It's also possible that he has something in his mouth that's causing him discomfort, either a bad tooth or a mouth ulcer or something else. That might cause the behaviour, kind of a response to the pain. It's also possible that he just likes to chew on computer towers, but you should check into the other things first. You could try rubbing the tower with a 'bad scent' that he won't like, which will keep him away from it, then see if he transfers his chewing to another piece of furniture or some other kind of object.
