I've had ferrets with glucose in the 20's that showed no obvious signs
(no staring, no foaming, etc). Some did have weight loss and
some also had diarrhea.

You may be seeing seizures. Low glucose/insulinoma will cause this. I
would get her to a vet asap and get her glucose checked again.
