Sharon, have you taken him to a ferret knowledgeable vet yet? We had one who couldn't open his mouth very wide and when the vet took xrays it was discovered that he had arthritis in his jaw. Just a thought cause there are probably other things that can cause him not to be able to open his mouth very wide. It might also help to find out what food they were feeding him at the shelter; he may eat that more readily than something new.
