I had a ferret get very sick and was on duck soup only - never went back to kibble even after he felt better. 8 months of duck soup only and he actually did quite well. Since your little one has insulinoma, I would recommend increasing the frequency of the feedings though to keep blood sugar stable.
I figure if you have a sick kid and they are eating that and it makes them happy, it has enough nutrition, no sense trying to force kibble they don't want and risk them not getting enough nutrition and getting worse.
They can live on that only and do very well. It is easier for them to eat and digest if they have other issues. Once I accepted that for my guy, bought a food processor to speed up the process, we were both much happier.
