Has megaesophagus been ruled out? There's a wealth of information in the archives on this including an excellent description of the type of barium x-ray that is helpful in diagnosis by Dr. Ruth:

One of our member's ferret had similar symptoms and it turned out to be megaesophagus. It was Dr. Ruth's post that finally convinced the treating vet to do the barium swallow that subsequently confirmed the condition.

On the subject of rubbing the nose in carpet after eating - I have never had a ferret that didn't rub its chin/nose in the carpet after eating duck soup. You could try Hills Prescription A/D, which is also highly palatable and easily digested and some ferrets prefer it to baby food. Mix it with a bit of warm water, put it on your finger and then dab some on the mouth/chin. After a few licks they generally take to it.
