Ferrets are really pretty tolerant to pred and I wouldn't worry as much about the immune system since controling the insulinoma is more important and if you can control the insulinoma you will lose her and what good is less immunocompromised ferret when they might die from another disease to put it bluntly.

Personally I don't even use Diazoxide since I dont think it is very effective but that is my experience. Now the fip side of this coin is you said the pred really made a noticable improvement if she improves she will have more energy and thus will move around more and thus hopefully burn off a few calories too.

What Ksren said about Adrenal disease is worth looking into if it wasn't already done and possible Melatonin and Lupron as a trial if she isn't already on it.

Canned diets: Any of the canned cat foods that are grain free would be fine if they are all meat. Meat based baby food too. Now grinding the EVO and making a slurry is still a dry in a sense. You might also try the feline version of Instinct. It is a good diet and most of the ferrets liked it. Keep the carbs away and the protein up. Recheck labs to be sure since January was a long time ago to a ferret.
