If you're concerned about feeding Sprout chicken but also want to try
a complete nutritional "duck soup" like Bob Church's Chicken Gravy,
there is something you can do :) Bob Church, in a post on FML some
years back, made it clear that other birds will work just fine in his
recipe. You can follow the basic recipe but make Turkey Gravy or Duck
Gravy or whatever else Sprout might like. I wouldn't enjoy chopping
up turkey bones to make turkey gravy but if that's what it took to
keep one of my ferrets going...
I use Pam Sessoms' pressure cooker method to make the gravy which is,
by far, the easiest way to do it. See:

If you want to use fresh duck the check if your area has an Asian
market. The ones near me have fresh (not frozen) duck and the prices
are reasonable. The biggest one in my area has a surprising variety
of birds so quail or even pigeon are possibilities if all else fails.
If Sprout turns his nose up at Gravy at first then put a little on
your finger. Ferrets seem to love that sort of attention and hand
feeding. You can also dab a little on his nose. He'll lick it off
and may then discover that he actually likes the stuff. That's worked
with some of my oh-so-picky eaters over the years.
The vets I've used all believe in Bob Church's Gravy formulation. I
use it with my older ferrets and to fatten up recovering, skinny or
sickly weasels.
If you want to see a blind eight year old make a mad dash at full
speed watch my Ella at the beginning of play time when I open the cage
after work. She knows that is gravy time and is absolutely addicted
to the stuff :)

[Wild pigeons have high rates of some types of infections
that ferrets can get (See seaprate FHL archives.), but I
do not know if domestic ones have similar risks for
ferrets.
