Have you looked at EVO, its a ferret food recommended by the vet the kids go to. It is a high protein food made for ferrets. I use Marshall ferret food softened in water for my sick kids, they like it better then the dry food. I add a small amount of ferretvite to it to make sure that they get some vitamins and minerals in their food.
At times I can get her to eat boiled chicken thighs pureed and thinned with the broth. Make sure there is no onion in that as that is toxic to ferrets. Baby food works great in a pinch as well and I have found that turkey and chicken seem to be favorites.
I wouldn't give up on Sprout yet, he may surprise you. I have to start thinking about that with Eve though. She had the adrenal surgery over 2 yrs ago and the symptoms are beginning to show again. She is 6 now so that may be the best option for her as she has always been such a petite little girl. Since weight has always been a problem for her she gets the Marshall ferret food softened in water with some Uncle Jacks Duk soup added and a little ferretvite. It has helped in maintaining her weight. She will let me know when she wants to join her brothers and sisters over the bridge. Even though she has slowed down she can still be hard to catch, I call her the white streak since she is an albino.
