Congratulations on taking these two in!
You are doing everything correctly and I'm sure in no time they will begin to feel at home, if not already. The only thing I would recommend adding to their cage is a lock-on water bowl as well as the water bottles. Good to have both options available and the metal spout isn't great for ferrets' teeth.
Schedule a vet visit asap for both of them for a complete health check with a ferret knowledgeable vet. I would hold off on the vaccinations until they are treated for whatever is wrong first(i.e., adrenal disease, insulinoma etc.). Sounds like Bear may have both conditions as Sukie suggested.
Vaccinations can be done in a couple of weeks. I don't have a ferret who is ill vaccinated until they are stable but discuss this with the treating vet.
