Their ears never smell at all! Even the ones who have come in with ear mites have never had smelly ears but then I take them in to the vet right away if there's the least little sign of possible mites like red ears or black exudate.

The vet takes a swab from each ear and examines it under a microscope and can tell if there's mites pretty quickly.

And there has never been a build-up of any kind in healthy ears.

If they smell bad then its likely something more serious, like a major mite infestation, fungus (as mentioned) or an ear infection. Time to see the vet if the ears smell or if there is a profuse build-up of anything in there.
