Tumors can and do come back quickly. Depends on the type of cancer, whether there's metastases (spreading elsewhere), whether the surgery is followed by chemo, etc. With pancreatic tumors there is always the likelihood of microscopic tumors remaining that cannot be seen. These may have grown.

The biopsies of the tissues removed would have informed whether the tumors were primary or metastatic, type of neoplasia, etc.

Ascending paralysis is different from hind leg weakness, which is more typical of insulinoma. I only have had one ferret with ascending paralysis and necropsy confirmed he had spinal and brain lymphoma.
Is he simply wobbly on all 4 legs or does it seem that he's becoming paralyzed at other end?

Nutritious soup is always a good idea, however, if his BG is already stable it may not make much difference to his presenting clinical symptoms. Is it possible that he is not eating as often as he should on his own?

Time to return to the vet for possible further diagnostics to see what might be going on.
