According to Wikipedia, the majority of sucralose is not absorbed by the bowel, hence it's low caloric value.
I believe you are referring to Xylitol which is toxic to animals.
Ferrets can suffer a wide range of allergies from pollens to cleaners, to food items and additives. It is usually a matter of trial by omission to find the irritant if it has not been deemed a bacterial sinus issue first.
In the case of an OTC product safe for use in ferrets,I have always been advised to use infant Benedryl (diphenhydramine) liquid.
