I am by no means an expert but the only thing that comes to mind is possibly a food allergy to chicken? I don't know what is in Carnivore care if it is chicken then try switching to turkey. You could try turkey baby food but make sure it doesn't have plant fillers like Gerber does. Other meats you could try is duck lamb, or venison. There are some ferret foods out there which have these instead of chicken.
This is all I can think of. I'll pray for your little one. He is lucky he has you to do your best to help him.
