To add to the excellent advice you have already received, I do have a question for you. It is not clear from your post whether his sister is with him during the week? He most certainly is missing his sister, whether or not he is annoyed with her sometimes vigorous play and he may be missing you as well.
In terms of surgery, the caution I would add is that a partial pancreactomy is a complicated surgery and not one I would have an inexperienced veterinary surgeon attempt.
The biggest issues I see are two-fold - inconsistent medication schedule(if that is the case) and separation from his beloved 'family.'
I realize you visit him on weekends but a week is a long time in a ferret's world.
