Did come across a paper that listed different values between sable (fitch) and albino but do not recall the source. However, have not come across anything that gives differing values for hearing versus deaf ferrets.
Yes, Fox gives tables for kits, adults, fitch, albino, males and females all with different values for blood and general biochemistry. These tables were from Marhall farm extensive research which was well done in the early MF days. I cannot find any references for any other differences other than these.
